Unwind and disconnect at Greyleigh, a sprawling property, and former dairy farm, set over 200 acres just a few minutes’ drive from Kiama. There are two luxurious country manors at Greyleigh, the Homestead and the Guest House, though it’s at the Homestead where you’ll find a dedicated library fit with a fireplace. This four-bedroom stay is also a great option for large groups – it sleeps 12 – and features a loft, a clawfoot tub and ocean views from the balcony.
Emirates One&Only Wolgan Valley is something to behold – it's rightfully known as one of the best resorts in Australia. Located in the Wollemi National Park and set on 7,000 acres of protected wilderness, the resort immerses you in bushland and peak luxury. Each of the federation-style one-, two- and three-bedroom villas has a cosy fireplace to settle in next to, plus its own private pool, balcony and bath. If you opt to leave your luxe villa (you’d be forgiven for wanting to stay put) there are archery, spa and guided horseback riding experiences (plus more) to take advantage of.
Take up residence at the off-grid and offline Kestrel Nest EcoHut for rejuvenation and rest on rolling farmland above a rocky mountain stream. The hut, just a short drive from both the Snowy Valleys and Wagga Wagga, boasts a well-equipped kitchen that comes with a loaf of the farm’s very own sourdough, hammocks for observing a clear sky full of stars, an outdoor bath and firepit, additional hampers and wines and a toasty indoor fireplace set between floor-to-ceiling windows with a backdrop of sweeping views. This incredible hut was named so because the kestrel bird was the only bird seen for two weeks following the January 2020 fires.
Set in the quaint Blue Mountains village of Leura, this unique converted dairy boasts six different styles of accommodation, from studio to milking shed, each with a toasty slow-combustion fireplace (except for The Studio). Whether you book into Moo Manor, a spacious, sunny cottage with north-facing windows and an original hayloft bedroom; or Buttercup Barn with its claw footed tub and home-style open-plan living area, rest easy knowing you’re surrounded by all the country comforts required for a Mountains escape.
The seclusion of Berowra Waters’ Calabash Lodge on the Hawkesbury River makes for a perfect spot to settle into for a luxurious winter weekend thanks to an eco-biofuel fireplace and water views. The four-bedroom lodge (each bedroom has views of the river) is flanked by Australian bushland and has its own private jetty. It’s fitted with all the modern luxuries desired: a grand dining area, soft linen and deep tubs for soaking. Snuggle by the fireplace with a board game or book, or rug up and head outside to nap on the deck hammock. You can also book a private chef, spa experience or yoga teacher during your stay.
Boutique hotel and holiday home combine at this coastal, cabana-style property in Gerringong on the South Coast. There are two abodes you can book into: the Soul Farmhouse, which sleeps up to 16, and the Soul Cottage, which sleeps up to seven. Both options are light-filled with bright and chic interiors and toasty fireplaces. Outside the Cottage you’ll find a firepit for toasting marshmallows, while the Farmhouse has an outdoor fireplace, perfect for cosying up next to all night long.
If you’re visiting the glorious Rowlee Wines in Nashdale, in the Orange region, consider booking into its two-night ultimate wine escape sleepover. After a day of wine tasting, nestle into a comfy country cottage in a vineyard setting. Dip into the stone bathtub for a luxurious soak, dine on the private deck overlooking the garden, then settle next to the wood-burning fireplace for the rest of the evening with a glass of wine in hand. The private deck with garden views makes for a great spot for dinner, overlooking the vineyard.
At Mill Cabin you sit high above Thredbo valley, a stone’s throw from the slopes. There are private views of the Snowy Mountains and beyond every way you look. It’s chilly out but you’ll be toasty warm inside, tucked within the stone-clad, Japanese interior-style cabin at Crackenback. This off-grid stay nods to the stockman huts of the region’s past, but with modern luxuries. There’s an outdoor, woodfired Japanese-style bath; a fully functional modern kitchen; a comfy queen-sized bed dressed in soft linen; and the centrepiece, a classic wood-burning fireplace framed by big glass doors, perfect for watching snow fall outside.
Farmhouse on Oxley sits on 57 acres of beautiful Mid-North Coast country, and is just a short drive from Taree, Old Bar Beach and Crowdy Bay and Tarin Tops national parks. The sprawling manor, a modern beach-farm getaway, is great for groups – it sleeps up to 16 people and there’s also a separate, self-contained space that sleeps two that can be booked in addition to the farmhouse. In the main home, find a huge modern kitchen and pantry, a cosy fireplace overlooking the verandah, media room and gym equipment. There's also an outdoor bath and firepit, too. The riverfront property provides access to the farmhouse tinny and canoes, great for exploring the river.
